Freeze-Drying Core Technology
Concentrate Placing
Evenly spread the concentrated coffee liquid onto a food-grade stainless steel tray.
Liquid layer thickness: 3-10mm (critical parameter; too thick a layer will result in uneven sublimation).
Trawl material: Food-grade 304 stainless steel.
Pre-freezing
Pre-freezing temperature: -30 to -40℃
Pre-freezing time: 2-4 hours
Rapid freezing causes the water in the coffee liquid to form small, uniform ice crystals.
The size of the ice crystals directly affects the uniformity of the freeze-dried coffee particles and the rate of dissolution.
Vacuum freeze drying (three stages)
Sublimation Stage: Heating plates provide heat, causing ice crystals to sublimate directly; chamber pressure is maintained at 10-30 Pa.
Desorption Stage: Further heating (50-60℃) removes residual bound water from the material.
Cooling Stage: After freeze-drying, the material is cooled to room temperature before sorting and packaging.
Post-freeze-drying processing
Crushing: Freeze-dried coffee blocks are crushed into uniform particles using a crusher.
Screening and Grading: Vibrating screen, 3-5 grades (fine powder, medium-fine, medium-coarse, coarse particles).
Iron Removal: Magnetic separation removes metallic impurities.
